Katie's Whatever is in the fridge...curry
Ingredients:
2 cans coconut milk
1 can tomato sauce
3 T curry powder
1 can lentils
1 can garbanzo beans
1 large eggplant, diced
2 zucchini, diced
1 red bell pepper, diced
1 green bell pepper, diced
1 bunch cilantro, coarsely chopped
Directions:
Pour coconut milk and tomato sauce into a large pan. Stir in curry powder. Add lentils and beans. Bring to a boil. Add vegetables, but not the cilantro. Stir. Simmer 20 minutes. Add cilantro. Simmer 5 more minutes. Serve over rice.
