Ultimate Vegetarian Chili

Oh my goodness, this was the BIGGEST hit in my house!!! RAVE reviews from EVERYONE! Can you believe it? Even my pickiest of picky eaters, my eldest, told me, "That was AMAZING!!!!" The best part, none of them had any idea it was vegan! They were SHOCKED! They thought for sure I had decided to end our "vegan week" a couple of days early. They thought the bulgar was ground beef. I have to admit, it really did look like it! I served it over brown rice. :)

Ultimate Vegetarian Chili

Ingredients:

3 tablespoon olive oil
3 chopped onions
1 tablespoon chili powder
1 tablespoon ground cumin
1/4 teaspoon cayenne pepper
2 peppers, chopped
3 garlic cloves, chopped
3 tablespoon unsweetened cocoa powder
1 large can, undrained, of tomatoes, chopped
1 cup water
1 can red kidney beans, rinsed & drained
1 can black beans, rinsed and drained
2 cups fresh or frozen corn
1/2 cup bulgur
salt and pepper
cilantro (optional)

Directions:

In a large pan, saute the onions and spices. Add peppers and garlic for 1 min. Add cocoa, tomatoes, and water; bring to a boil. Add kidney and black beans, corn and bulgur. Reduce heat to low and simmer, uncovered, for 15 min. or until bulgur is cooked. Add salt and pepper to taste. To serve, sprinkle with cilantro.
